Pinotage is South Africa`s flagship varietal. It is a cross between Pinot Noir and Cinsalt, producing a wine of unique character and flavor. Its a wonderful wine with a quirky fermentation need - keep the fermenting wine slightly cool as if it is too hot, it can encourage acetone-like flavors to develop!
