Cote de Blanc (Formerly Epernay 2): This yeast is excellent for fruity and dry wines alike. If fermeted at the lower end (50s-60sF) wines will ferment slower with more residual sugar. At the higher end (70s-80F) fermentation will occur rapidly and leave behind very little sugar resulting in a dry wine. Cote de Blanc is perfect for Chardonnay, Riesling, mead and cider.

Fast fermenting strain. Ensures a regular fermentation even at low temperatures (53¡-57¡F). Alcohol tolerance up to 14%. Low foam production and very low volatile acidity and sulphur compound production. This strain respects typical varietal aromas of the grapes and intensifies primary aromas. Use in Chardonnay Sauvignon Blanc Riesling Gewurztraminer and Moscato. Formerly known as Epernay 2.
